More than twenty years ago, La Caja China was a roasting box that developed by Miami-based Cubans to roast the whole pig! I (as a Chinese) am pleasant to know that in parts of Latin America, to call something Chinese is to deem it clever!
The Caja China—basically a Dutch oven on steroids—looks like a cross between a wheelbarrow and a small steamer trunk. It provides consistent, indirect heat that causes the fat to bathe the meat. (via Washingtonian.com).
Nowadays, the company producing Caja China has developed to specially manufacture and sell BBQ utilities.
